class (exceptions at instructor discretion).
Class Description:
This class is a follow-up for students who took Laura Leigh's introductory class,
Roll Your Own Sushi.
We go past making the rice and "maki" rolls and look to "nigiri," small pieces of oval shaped rice with a band of "nori" seaweed around it, making either a cup or a rice pad to put fish and vegetables on. Also covered is "Sashimi" -- how to cut and place for presentation.
Laura Leigh will also demonstrate Hawaiian "Pokes" with ahi, octopus, salmon and abalone -- a delicious way to eat raw seafood with a delicate marinade. These pokes, nigiris and sashimis complete the platter for the "maki" she taught in the previous classes for presentation for self, friends and family dining.
The class will also include sunomono salad, miso soup and tobiko.
About the instructor
Laura Leigh is self-taught in the art of sushi making. "It's easy and fun", says Laura. This year marks her 18th year with "Sushi Girl" on the north coast.
